Veggie Burger
1. Burger buns
2. Veggie patti ( I use Masala Patti from trader joe's or use this Recipe to make one)
3. Coleslaw ( Recipe )
3. Lettuce, cucumber, onion and tomatoes
4. Cheese slice
5. Tomato ketchup and mustard sauce
Procedure
1. Lightly toast the burger buns.
2. Spread tomato ketchup and mustard sauce on lower bun.
3. Place lettuce and coleslaw and patti.
4. Place cheese slice, put onion slice, few cucumber slices and tomato slices.
5. Cover with upper half of bun.

Aloo Palak
Ingredients
- Spinach bunch - 2
- 3 Potato - Boiled, Peeled and chopped
- 1 medium Onion - Finely chopped
- Ginger - small piece
- Garlic - 3 cloves
- Chillies - 3 to 4, finely choppd
- Garam masala
- Kitchen king masala
- Yogurt
Procedure
- Boil the spinach, add some salt.
- Blend garlic, ginger and spinach to make smooth puree.
- In a pan heat ghee/butter add cumin seeds, asafoetida,turmeric, chillies and onion. Let it cook for 2 to 3 mins.
- Add potatoes, garam masala and kitchen king masala and cover it for another 2 mins.
- Add spinach puree, salt and sugar, add some water if required. Whisk the yogurt and add it.
- Turn the heat off once it starts to boil.
Note - Use same recipe to make Palak Paneer and Palak Chana.

Spinach Pesto Pasta
Ingredients
- Boiled penne (whole grain)
- Pesto (Get it from supermarket or find recipe here)
- Asparagus
- Cherry tomatoes
- Yellow bell pepper
- Spinach
- Garlic cloves
- Parmesan cheese
- Olive oil
Procedure
- Heat the olive oil in a pan, add chopped garlic and asparagus. Let it cook for 2 to 3 minutes.
- Add yellow bell peppers, pesto and pasta. Mix well.
- Add spinach and cherry tomatoes then add salt.
- Serve hot with parmesan cheese shavings.

Pineapple-Paneer Salad
1. Greens - none
2. Veggies/fruits - pineapple, cucumber, tomato, onion, red bell pepper (sauteed in olive oil), coriander
3. Protein - Boiled kidney beans
4. Crunch - dried cranberries and walnuts
5. Cheese - Cottage cheese a.k.a. Paneer cubes (sauteed in olive oil)
6. Dressing - mayonnaise + Black pepper + salt
In a pan heat olive oil, add paneer cubes and red bell pepper and saute for about 1 minute and then add it in salad.
This dressing is very mild, add chilli flakes or cayenne pepper to spice it up.
